Baby Gem & Strawberry Goat Cheese Salad
Mint and tahini dressing give this salad a vibrant twist. Perfect as a side, make it a meal by adding grilled chicken.

Ingredients
Salad
- 2 heads Andy Boy Baby Gem Lettuce, washed and torn into medium pieces
- 1 head Andy Boy Romaine Hearts, washed and chopped into medium pieces
- 2 cups sliced strawberries
- ¼ cup fresh mint leaves
- ¼ cup crumbled goat cheese
- 1/8 cup sliced almonds, toasted
Dressing
- ¼ cup olive oil
- 1/8 cup tahini
- 2 Tablespoons white wine vinegar
- 2 Tablespoons lemon juice
- 2 Tablespoons water
- 2 teaspoons Dijon mustard
- ½ shallot
- ¼ teaspoon Kosher salt
- ¼ teaspoon ground black pepper
Directions
1. Place lettuces in large serving bowl.
2. Top with strawberries, mint, goat cheese and almonds.
3. Blend dressing ingredients in food processor or with stick blender until smooth.
4. Drizzle salad with dressing.
