Baby Gem Lettuce Mediterranean Wrap

For a fun variation, head to your supermarket’s olive bar and substitute a cup of your favorite marinated olives, peppers, artichoke hearts, mushrooms and cheeses for the sundried tomatoes and feta.

Ingredients

1 head Andy Boy Baby Gem Lettuce, washed and leaves separated

2 spinach flavor large tortilla wraps

1 cup rotisserie chicken chunks

1/2 cup feta, cubed

¼ cup sundried tomatoes

¼ cup pesto

Directions

1. Arrange tortilla on flat surface.

2. Place ¼ of lettuce leaves across the center horizontally, leaving a 2-inches empty border on each side.

3. Layer half of chicken, feta and sundried tomatoes on top of lettuce and drizzle with half of pesto.

4. Top with an additional ¼ of the lettuce leaves.

5. Fold up the bottom of the tortilla, tuck in the sides, and roll like a burrito. Repeat with second tortilla and remaining ingredients.

6.Serve whole or cut in half.
