Balsamic Glazed Brussels Sprouts w/ Pomegranate Seeds
These #AndyBoy balsamic glazed brussels sprouts with pomegranate seeds is the perfect side dish for any holiday festivity. They’re crispy, sweet, tangy, and will even look beautiful on the table!

Ingredients
1 bag Andy Boy brussels sprouts
3 tbsp. olive oil
4 cloves garlic, minced
1 tsp. salt
1/2 tsp. pepper
1/3 cup balsamic vinegar
1/2 tsp. fresh thyme
2/3 cup fresh pomegranate seeds
Directions
- Preheat oven to 400°F, line a baking sheet, and halve the brussels sprouts
- Add the oil, garlic, salt, and pepper to a bowl and whisk to combine
- Add the brussels sprouts halves to the mixture and toss to evenly coat
- Place brussels sprouts cut side down on the sheet pan and roast for about 20-25 minutes or until they are nicely browned
- After the brussels are finished roasting, scoop them back into the bowl and drizzle the balsamic glaze overtop (use store bought or make your own)
- Place them back on the sheet pan, cut side up, and sprinkle with fresh thyme. Roast for another 5-10 minutes.
- Remove from the oven and transfer to a serving dish. Add the pomegranate seeds and toss to combine.
- Serve and enjoy!
