Italian Sausage & Andy Boy Broccoli Rabe Bread
Ingredients
- 1 pound ball of pizza dough
- 1 ½ lb. of Italian sausage, casings removed
- 2 cups of shredded mozzarella
- ¾ cup of grated Romano cheese
- 1 cup broccoli rabe
- Black pepper
- Olive oil
Instructions:
- Preheat oven to 400° F
- Cook sausage in a skillet with olive oil, breaking it up into fine pieces and cooking until fully browned
- Blanch or sauté broccoli rabe until tender
- Line baking sheet with parchment paper and let pizza dough thaw to room temperature
- Roll out dough into a large rectangle
- Scatter cooked sausage crumbles all over dough, leaving an inch on each side
- Sprinkle shredded mozzarella cheese evenly overtop
- Sprinkle grated Romano cheese evenly overtop
- Scatter broccoli rabe overtop
- Start rolling up the dough, tucking in the ends as you go to prevent leakage, like a burrito. Pinch the dough to seal at the seams.
- Optional – form into “U” shaped curve
- Place on parchment lined baking sheet, seam side down
- Brush top and sides with olive oil and lightly sprinkle pepper overtop
- Top with additional mozzarella and Romano cheese if desired
- Bake at 400° F for 15 minutes. Then, reduce heat to 350° F and bake for an additional 30 minutes or until golden brown.
- Remove from baking sheet and transfer to a cooling rack (to prevent the bottom from getting soggy)
